Snack Bars

Ingredients

Line a 9x13 pan with parchment paper (a silicone baking mat works well, too).

In a large bowl, stir together oats, flour, brown sugar, cranberries, wheat germ, salt, cinnamon and pecans. In a small bowl, whisk together oil, honey, egg and vanilla. Pour the wet ingredients into the dry ingredients and mix with a silicone spatula (or your hands). Press the mixture evenly into the baking pan. Make sure it is packed tightly.

Bake 25-30 minutes at 350 degrees, or until edges are golden. Cool completely in the pan before turning out and cutting into bars. For storage, wrap groups 2-3 bars together plastic wrap and freeze. We aim for a 2-3 bar portion to total around 2.5 ounces.
